Quinoa & Prawn Paella
I created this when I was stuck for something healthy to prepare for dinner recently. It turned out much better than expected. It's my healthy take on Paella, without the starchy white rice. Instead quinoa is used which is high in protein and contains all 9 essential amino acids.
Ingredients - Serves 2
Coconut Oil or Extra Virgin Olive Oil
150g dry quinoa rinsed
300ml chicken or other stock
1 aubergine
1 red pepper
250g King Prawns
Paprika
Turmeric
Juice & Zest of 1 lemon
Bunch of Fresh Basil or Parsley chopped
Recipe
Slice aubergine into 1 cm rings and oven bake until golden brown (30 mins approx)
Chop 1 red pepper into 1 cm pieces and put aside
Cook 150g quinoa with the stock or bone broth. Allow to cool slightly and pour into a serving bowl.
Heat 2 tbsp coconut or olive oil in a frying pan. Add 250g prawns along with a teaspoon of paprika and half a teaspoon of turmeric and fry prawns until heated through or cooked untl pink if using raw prawns. Add the juice of 1 lemon near the end of cooking and heat for 1 minute. Remove from heat.
Add 25g basil leaves to the quinoa along with the zest of one lemon.
Add the chopped red pepper and aubergine to the quinoa and the prawns and mix well before serving immediately.
