Flaxseed Keto / Low-Carb Bread

Easy, healthy and delicious low carb / keto bread


This is the ultimate low carb bread that isn't just easy to make but also tastes great! With minimal ingredients and no waiting around for the bread to 'prove' you can have delicious, healthy low carb bread ready in under an hour. With its mild, nutty flavour and crisp, crunchy consistency, Flaxseed is incredibly versatile when it comes to cooking with. It’s loaded with nutrients and linked to numerous health benefits.


 

Ingredients

· 250g freshly ground linseed/flaxseed. You can buy in bulk on amazon or 250g bags in Tesco

· 1 tsp of fine sea salt

· 2 slightly heaped tablespoons of psyllium husk powder (not whole psyllium husk)

· 270ml of freshly boiled water

· 1 tsp of olive or coconut oil for greasing


Method

  1. Heat oven to at least 220c

  2. Grease a small (1Ib) loaf tin

  3. Grind the linseed/flaxseed in a Nutribullet or coffee grinder until very fine.

  4. Place the freshly ground flaxseeds in a large bowl with sea salt and psyllium husk powder and mix well.

  5. Add in 270ml of freshly boiled water and mix well with a wooden spoon; the mixture will resemble play dough.

  6. Mould the dough with your hands into a small loaf shape slightly smaller than the tin, and then place in the prepared tin.

  7. Leave for 5 minutes to settle in the tin. Don’t worry if it looks cracked and uneven, this will even out once it is baked.

  8. Bake in the oven for 50-60 mins. It will double in height.

  9. Turn out and cool before cutting. It will keep for 3 days at room temperature or longer refrigerated.
