High Fibre Gluten-Free Breakfast Muffins

These muffins pack a punch when it comes to nutrition. They are loaded with healthy fats, soluble and insoluble fibre, and a fair amount of protein.

Unlike conventional muffins, these won't leave you with a blood sugar dip an hour later. The use of xylitol or monk fruit is useful in cases of blood sugar dysregulation.

Ingredients

40g ground almonds
50g ground flaxseed (linseed)
30g pumpkin and sunflower seeds
2 organic eggs, beaten
1 tsp ground cinnamon
1 tsp aluminium-free baking powder
2 tbsp melted organic coconut oil

Bake at 180°C for 20–25 minutes until golden. Perfect for an on-the-go breakfast or afternoon sustaining snack.
